Manel Lino began his professional training in 2003, building a distinguished career in international fine dining. His trajectory is marked by tenures at some of the world's most prestigious establishments, including Mugaritz ( Michelin Star), El Celler de Can Roca (** Michelin Stars), and Mandarin Oriental Barcelona (** Michelin Stars).**

Upon returning to Portugal in 2012, he took on leadership roles in premier kitchens, notably serving as Sous-Chef at Hotel Marmòris and later as Executive Chef at Hotel Bessa Avenida da Liberdade.

Since 2015, he has dedicated himself to professional training and talent development as a Culinary Instructor at the Turismo de Portugal hospitality schools. His work is instrumental in empowering new professionals and promoting national gastronomy, merging his extensive field experience with a deep commitment to the future of the industry.

João Miguel Pais: Specialist in Food & Beverage Management and operational excellence within the luxury hospitality sector. With a proven track record in strategic operational transformation, the creation of luxury service standards, and high-impact training, he has excelled in world-class brands.

His career includes tenures at Michelin-starred restaurants (such as Àbac and Enoteca) and notable achievements in hotel leadership: he contributed to earning 1 Michelin Star at Monumental Palace and ensured the maintenance of 2 Michelin Stars and 3 Michelin Keys at Vila Vita Parc.

He also brings experience from projects with Ritz-Carlton, Four Seasons, and Mandarin Oriental—units recognized by the Forbes Travel Guide and The World’s 50 Best Hotels. Currently, he focuses on optimizing operations, elevating standards, and developing distinctive gastronomic concepts, applying a strategic vision centered on guest excellence.
